As someone who loves desserts, cookies, and pastries, you’d think I’d be a huge fan of macarons. But for the longest time, I wasn’t. The reason? They were always too sweet for my taste. I wanted something I could keep eating, something that would make me say, "Hmm, this is the one!"

Sadly, I could never find a macaron that struck that perfect balance—until one day, a lightbulb went off in my mind. Why don’t we try making our own macarons? I asked my husband, and that moment sparked a whole new adventure.


A Sweet Challenge: Convincing My Husband


My husband was surprised by my request. "We already make so many types of cookies," he said. "Why go for macarons?" And he had a point; our cookie assortments were already popular. But I explained to him that I’d never had a macaron that made me fall in love with it. So, my husband, being the master of flavors that he is, accepted the challenge. Little did we know, it would be a journey full of trials and errors.

Macarons are notorious for being tricky to make. Getting that perfect crisp shell, the soft inside, and the right texture can lead to more failures than successes at first. And trust me, we had our fair share of failed batches! But with each attempt, my husband got closer and closer to creating something that was just right: a macaron that wasn’t overwhelmingly sweet but still indulgent enough to make you want more.


We tested the macarons with friends, family, my daughter’s piano teacher, and even our suppliers. The verdict? It was a hit! Everyone loved the balance between the sweetness and the delicate flavor.

But our macaron journey didn’t end with just the shells. We discovered that the filling plays an equally crucial role in creating a memorable macaron. It took several rounds of experimentation to find fillings that perfectly complemented the delicate shell without overpowering it. We realized that finding this balance was key to making the macaron irresistible. It’s not just about sweetness; it’s about pairing textures and flavors to create harmony in every bite.
